What exactly is chile purée?

Chile purée is the base of countless Mexican dishes: enchilada sauce, pozole broth, mole negro. Traditionally the chiles are toasted, soaked, blended and strained by hand, which takes hours. Ours arrives already cooked and blended.

How do I use it?

Spoon it straight from the pouch into whatever you're cooking. No soaking, no blending, no straining. Use it as the base of a sauce, a broth, a marinade or an adobo.

Which chile should I start with?

Guajillo is the classic: earthy, mild, and at home in enchiladas, pozole and salsas. Ancho is deeper and slightly smoky for moles and stews. Árbol is the hot one.

How long does it keep?

Sealed, up to one year. Once opened, keep it refrigerated and use it within the period printed on the pouch.

Where is it made?

In México's traditional chile-growing regions, in an FDA-compliant facility, using the same methods the recipe has always used.
